I’d been in search of more savory vegetarian/vegan breakfasts lately, and when visiting a friend recently who made veggie burritos for breakfast, I knew I’d found my latest breakfast craze! These are so versatile, easy, quick and portable if need be. You could even probably make them in advance and keep them in the freezer. The best part is, you can adapt to whatever you have on hand. My favorite kind of recipe!

I started out sautéing the veggies in a pan with a little oil, but now prefer to just microwave it for added ease and speed.

Veggie Breakfast Burrito Recipe

1 medium-to-large whole wheat tortilla
Grated cheese of choice (I love Daiya Jalapeño Havarti)
Handful spinach, chopped
1 large mushroom, sliced
Drizzle of oil of choice
Dash salt
Stalk or two of broccoli, chopped
Vegan ranch dressing (or dressing of choice — I use Follow Your Heart Vegan Ranch)
1/4 avocado, sliced
Optional: Veggie sausage patty such as MorningStar Farms Maple Sausage Patty

Place tortilla on a plate and put the grated cheese on top. Microwave 30 seconds on high.

In a bowl, put the spinach and mushroom and drizzle with oil and sprinkle on salt. Microwave 1 minute on high, stir, then place onto tortilla.

In same bowl, place broccoli and microwave about 45 seconds on high until softened. Place onto tortilla.

If using sausage patty: in same bowl, place patty and microwave 1 minute on high till heated throughout. Slice and place onto tortilla.

Drizzle on some ranch and add the avocado. Wrap it up and you’re done!
