I’m a little under the weather today and was craving some brothy comfort soup. This soba noodle soup that I just threw together turned out to be perfect! You can use whatever noodles or pasta and veggies you have on hand. Rice or barley would be a good sub for the noodles too for a non-noodle version. I love when simple ingredients turn out to be amazing in a quick and easy recipe!

Soba Noodle Soup Recipe

8 cups of water
Salt-free vegetable bouillon – enough for 8 cups of water
1/2 tsp. Himalayan pink salt (or to taste)
1 cup chopped carrots
1 cup sliced mushrooms
About 2 cups loosely chopped spinach
2 servings of soba noodles
1-2 T. soy sauce to taste
In a medium to large pot, bring the first 5 ingredients to a boil. Lower heat to medium and simmer till carrots are soft. Add the soba noodles and spinach and cook about 4-5 more minutes. Remove from heat and add soy sauce to taste.

Serves about 4.
